re: water kefir, I&#039;ve found in the winter that I can let it go longer than 48 hours with no problem. You&#039;ll totally start to figure out when it&#039;s &quot;done&quot; after a few batches. Compare it with the sugar water for your next batch and you&#039;ll taste and smell the difference.

		<description>I didn&#039;t look over at NK&#039;s salsa recipe, but the recipe I use has 1/4 cup water, 1/4 cup whey, and 1 table spoon sea salt (I used pickling salt).  This goes in with juice of two lemons and all the other salsa stuff.  I don&#039;t find it overly salty.  It&#039;s soooo good!  We&#039;re just ok w/sauerkraut, but this salsa, omg we could eat it on ice cream LOL.  Here&#039;s the recipe:
